Grilled tuna
with soy sauce and stir-fried vegetables
PREPARATION
1. Finely chop the ginger and cook it with the soy sauce and sugar to make a sauce. Add the sliced spring onions at the end.
2. Cut the tuna into twelve nice pieces for grilling. Cut the carrots and sugar snap peas into diamond shapes and the red onion into half rings.
3. Stir-fry the vegetables together with the bean sprouts and divide them into three “mounds” on each plate. Quickly grill the tuna on both sides, season with pepper and place it on top of the vegetables. Spoon the sauce around and garnish with herbs.

1 piece fresh ginger
200 ml soy sauce
50 g brown sugar
1 bunch spring onions
500 g fresh tuna fillet
100 g carrots
100 g sugar snap peas
50 g red onion
100 g bean sprouts
pepper
Soy sauce
Soy sauce is widely used in East Asian cuisine. The sauce is made from soybeans, wheat, water and salt, with additional spices varying from country to country. In the Netherlands, Indonesian ketjap is also often used instead of soy sauce, although it is slightly thicker than traditional soy sauce. Ketjap manis is sweet soy sauce, while ketjap asin is salty.
