Fried Brie de Meaux
with poached peach
PREPARATION
1. Slice the lemon. Bring 500 ml water with sugar and lemon to a boil. Peel the peaches, halve them and remove the pit. Place them in the syrup, remove from heat and let cool.
2. Add parsley and breadcrumbs to a food processor and blend into green breadcrumbs.
3. Beat the egg. Cut the Brie into four pieces and coat in flour, then egg, then breadcrumbs.
4. Heat oil to 175°C and fry the Brie for about 2 minutes.
5. Slice the peaches and mix with finely chopped basil. Serve the Brie with peach and sprinkle with almond flakes.

250 g sugar
2 fresh peaches
1/2 bunch parsley
200 g breadcrumbs
1 egg
250 g Brie de Meaux
Flour
4 basil leaves
1 tbsp almond flakes

Brie de Meaux is a Brie cheese made in Meaux. The name is protected and may not be used by just any Brie producer. A Brie is always flat, round and mild in flavour. “Real” Brie is made from raw milk, but the varieties you find in supermarkets today are usually made from pasteurised milk in factories.
