Goat’s cheese salad
with apple and walnuts
PREPARATION
1. Cut the goat’s cheese into four slices of 1 cm thick and place them on a lightly oiled baking tray. Bake for 4–5 minutes in a preheated oven at 180°C.
2. Wash the apple and cut it into wedges. Heat a frying pan and cook the apple together with the walnuts until golden brown. Add the honey and chives and remove from the heat.
3. Divide the lettuce over four plates and sprinkle with pine nuts and cherry tomatoes. Drizzle lightly with olive oil and balsamic vinegar.
4. Remove the cheese from the oven and place it on top of the salad. Spoon over the apple and walnut mixture and finish with fresh herbs if desired.

300 g goat’s cheese
1 apple
100 g shelled walnuts
50 g honey
1 tbsp chives, finely chopped
250 g lettuce, washed
50 g pine nuts, toasted
cherry tomatoes
balsamic vinegar
olive oil

Serving this as a lunch dish? Halve the quantities and divide the warm ingredients over four ciabatta rolls.
