Recipe: Frisian sugar loaf


  • 1 sachet dried yeast
  • 150ml lukewarm milk
  • 2 eggs
  • 500g plain flour
  • 1 tsp salt
  • 75g soft butter
  • 3 tbsp ginger syrup
  • 3 tsp cinnamon
  • 125g white rock sugar 
  • granulated sugar
  • loaf tin


Dissolve the yeast in the lukewarm milk and leave it for ten minutes. Add the eggs, flour, salt, butter and ginger syrup to the dissolved yeast and knead the mixture with your hands to form a soft dough. Transfer the dough into a bowl, cover with a cloth and leave to rise in a warm place for 45 minutes.

Butter the loaf tin with lots of butter and sprinkle with the granulated sugar. Mix the cinnamon with the rock sugar and stir into the dough. Roll into a loaf shape and place in the loaf tin. Sprinkle more granulated sugar on the top.

Cover the dough again and leave to rise for another 20 minutes. Preheat the oven to 200°C. Bake the loaf for about 30 minutes, just below the centre of the oven. The layer of sugar should turn golden brown. Loosen the sides of the loaf with a knife before turning out, and leave to cool on a cooling rack.

Slice the sugar loaf thickly and serve with butter.
