Healthy Christmas Wreath

Ingredients

  • various vegetables like zucchini, aubergine, carrot, radish, bell peppers
  • (fresh) thyme
  • olive oil
  • salt and pepper

 

Extra requirements

  • griddle or large baking dish
  • thick needle
  • cord

 

 

Preparation

Preheat the oven to 220 °C. Wash the vegetables and cut into thick slices. Place the vegetables on a griddle or in a baking dish and drizzle with olive oil, thyme and salt and pepper. Bake approximately 20-25 minutes in the oven.

Leave the vegetables to cool slightly and then string them around to create a necklace with the cord. Knot the two ends together so it forms a wreath.
